Sorry to for anyone that is sick of rhubarb crisps, but I can't find a good recipe anywhere and I am in need of one. I know we received one in our boxes a year or so ago... can someone please post one? Bonus points if it can be easily veganized!!!

ReplyDeleteThe crisps I've made have butter - if you are vegan, you would know the best substitute better than I would! So here goes:
5 cups fruit, chopped (I used a pound of rhubarb with some strawberries and blackberries - you could do all rhubarb or whatever combo you want of course). Toss fruit with 1 c. sugar, 3 T. cornstarch, pinch salt, 1/4 t. cinnamon. Spread in bottom of 8x8 pan. Topping: 2/3 c. brown sugar, 5 t. cold butter cut up, 1/2 c. rolled oats, 1/2 c. flour, 1/2 c. chopped nuts (I used pecans), dash salt. Combine topping ingredients in food processor or by hand with a pastry blender or fork. Crumble over fruit. Bake until topping is browned and fruit is tender, 30-40 min.
This is a combination of two recipes from Bittman's How to Cook Everything: the Apple Crisp and the Rhubarb Pie. But it's tasty, great with vanilla ice cream. Or does that go without saying?
Oops just realized vanilla ice cream was kind of a dumb suggestion for a vegan! Sorry!
